The raindrop cake originates in Japan where it’s called mizu shingen mochi. The gelatin-like cake is made using agar, a clear, animal product-free version of gelatin. The raindrop cake is paired with fresh seasonal fruits, macha tea powder, kanako (roasted sesame seed powder), and kuromitsu (sweet dark sugar).
